Pošip (pronounced POH-ship) is a varietal indigenous to the Dalmation Coast that has been cultivated since at least the 4th century B.C., and this version further proves the point that one need not spend a lot to drink very well. One needs only an open, adventurous attitude, and trustworthy advisors. The Zlatan Otok winery was the second established after the country declared its independence and, still family owned, it is now one of the biggest wineries in Croatia. Planted on steep mountain slopes of limestone, the vineyard is dry-farmed organically and completely by hand. The grapes are allowed 2 days on the skins after harvest to gain more aromatic intensity. The wine has the signature heft of Pošip, with mineral cut and flavors of dried apricot, fig and caraway. Pairing options are diverse, from mussels and white fish to prosciutto, aged cheeses and pork chops.
