The story of Soave is a familiar one for Italy: a classic wine catches fire in the new world, production is pushed to new areas surrounding the original vineyards, quantity is emphasized over quality until the brand becomes tarnished and the market for the wine evaporates. Like Chianti, the correction came in the creation--or re-creation-- of a “Classico” zone to reclaim the quality that made the wine popular in the first place. That story is especially relevant here as Aldo Magnabosco was a winemaker at Bolla, which made Soave well known in the 70s, and who founded his own winery in the most prime parcels of the Classico zone after he retired. Soave Classico is made from at least 70% of the Garganega grape, but in this case is 100% Garganega that is hand picked from the family’s sustainably farmed vineyards. Soave is a versatile white that ages well, acquiring more honeyed and almond paste notes to accompany its fresh yellow apple, pear and green plum flavors. This bottling is named for Aldo’s granddaughter who, along with her father and brother, now runs the winery. Soave’s calling card is that, like a dark suit, it goes with everything.
