Slovenia has an ancient, pre-Roman wine culture, and since the fall of the Iron Curtain and their entry into the European Union, a steadily climbing number of dry, varietal bottlings have been making their way to the US. This wine is not a white, however. The Italians call this style “Ramato” after their word for copper, and with three days on the pinky-gray-blue skins, the wine acquires a coppery pink color as well as a whisper of tannins. Sustainably farmed, the wine is matured in a mixture of neutral barrel and stainless steel on its lees for an elegant mouthfeel.  Flavors of pear, melon and red apple skin along with aromas of fresh-cut flowers, make this an extremely versatile wine for pairing with rich, even stinky cheese, salmon, grilled veggies and even barbeque.
