Jean-François Mérieau is the fourth generation of his family running this estate. The vineyards are sustainably farmed with organic certification in process. The careful farming allows the minerality of other regions of the Loire Valley, such as Sancerre, to be displayed in this wine from the Touraine. Long, cool, fermentations keep the focus on the fruit, and five months of aging on the lees (the inactive yeast cells left over after fermentation) gives a full mouthfeel and creaminess to balance Sauvignon Blanc’s high natural acidity. This is a wine generous enough to drink on its own or to pair with light dishes such as rotisserie chicken and rice.
