Aseginolaza y Leunda's Birak Tinto 2023 is a testament to the revival of Navarra's indigenous winemaking heritage. Crafted by environmentalists Jon Aseginolaza and Pedro Leunda, their approach contrasts with the region's past focus on international grapes, instead championing old vines and naturally farmed plots.  This red wine originates from non-irrigated, old bush-vine Garnacha, thriving in the rocky, calcareous soils of Olite's Zidacos river basin at 400m altitude. Their winemaking process emphasizes the duo's commitment to sustainability and terroir expression. Destemmed grapes undergo natural fermentation in steel tanks for 15 days, with gentle pumpovers. The wine is then aged on lees in steel for four months, followed by two months in old French oak, preserving its purity. Notably, it is bottled unfiltered and unfined. Birak embodies the essence of Navarra's ancient vineyards, where biodiversity and indigenous varieties like Garnacha flourish. Juicy blackberries and black cherry notes with smooth tannins make this a perfect mate to jamon, chorizo or smoked red meats with a nice amount of marbling.
