Txakolina (Chalk-oh-LEE-na) is a crisp, light, mineral, slightly effervescent style of wine traditional to the Getaria area of the Basque Country that was virtually unknown, until recently, outside of that region and the United States. In the Basque Country the wine is served with the “high pour” into small tumblers held at the waist while the bottle is raised well above the shoulders to “break” the wine to release the bubbles and aromas of the wine. I would do some practicing with water before trying it with my Txakolina, because I wouldn’t want to waste any!
