We had another Assyrtiko in our June case, but this time we have a very different interpretation of the grape that emphasizes freshness. Grown at high elevation in the Northern region of Macedonia, just across the border from the Republic of Macedonia, using organically grown grapes, Atma is Greek for soul and is the entry level brand of Greece’s arguably best and inarguably most famous winemaker, Apostolos Thymiopoulos. (We had his Young Vines Xinomavro in Kompas club a couple of years ago.) Thymiopoulos buys the fruit from long-time partners who farm organically and to his specifications. Only the free run juice is used and native yeasts ferment the juice in chilled stainless steel tanks. Malolactic fermentation is prevented to keep the citrusy acidity that balances the wet rock minerality, citrus blossoms  and touch of white peach. Incredibly versatile for pairing and will remain fresh and unperturbed for many days after opening.
