Rafael Cañizares is a fourth-generation winegrower who focuses on native grapes and sustainable viticulture in his native La Mancha, the land of Don Quixote. High on La Meseta, the plateau that, along with its numerous mountain ranges, defines Spain’s geography, the Summers are blistering and the Winters are cold. This combination defends against fungal infections so traditional, organic farming methods are successful. Verdejo is native to Rueda farther to the North, but with its enormous popularity within Spain the grape spread to other regions. Similar soils and climate mean that the now mature vines planted in 1994 produce Verdejo very much in the style of Rueda, with bracing acidity, floral aromas and flavors of yellow and green stone fruit. Perfect paired with the region's hors d'oeuvres: olives, Marcona almonds and Manchego cheese.
