Ben Doren, a restaurateur and wine distributor, had learned much about great wine and winemaking from his day jobs, so when his brother bought a house in Sonoma Valley near the town of Kenwood with a half-acre of Cabernet Sauvignon and wondered what to do with the next crop, he jumped at the chance to make his own wines. Organically farmed, hand-harvested and allowed a long, cool, completely natural fermentation, the wine is aged in 50% new French Oak and displays a full, velvety mouthfeel, and plenty of dark berry, tobacco and dark chocolate notes. The touch of dark bell pepper that is a signature of the Cabernet Sauvignon grape but which is often missing in the riper, modern Napa Valley style, is subtly, and elegantly displayed here. This wine can easily age for ten or more years, but is drinking beautifully now and we can’t think of a better partner for roast or braised beef.
