Françoise Le Calvez comes from 12 generations of vignerons making wine in the Minervois region of Languedoc. She turned, along with her husband Pascal Frissant and her children, Mathias Paicheler and Sarah Frissant, a small inheritance of vineyards and a winery into a medium sized, certified organic and practicing biodynamic estate with a solar powered winery and bottling line. Minervois is an arid, windy place where not much other than olive trees, scrub and grape vines can grow. Clay and limestone pebbles constitute what counts for soil here, and twelve generations of knowledge are necessary for the successful harvesting of grapes. This wine is equal parts Grenache and Carignan with 5% Syrah. The grapes are hand harvested around two weeks later than the vineyards at the bottom of the Minervois slope, and the grapes are allowed to ferment naturally with three to four weeks of maceration on the skins. The wine is aged in stainless steel tanks as the natural spiciness of the grapes and scrubland terroir need no augmentation or concentration from oak. Flavors of tapenade, garrigue, brambles, cherry, five spice and magnolia with medium velvety tannins and brisk acidity. Grilled pork or lamb would do nicely.
