Valdejalón is located in Aragon, in Northeast Spain and it is believed that viticulture here predates Roman settlement. Though it is now fairly well established that Garnacha/Grenache originated in Sardegna with the Cannonau grape, the grape was planted in Aragon after the Aragonese conquered Sardegna in the 14th century, making this is the second oldest area for the noble Garnacha grape. It thrived in its new home, so much so, that even the village of Cariñena, which gave its name to the Cariñena/Carignan grape, planted Garnacha in Carignan’s place. Master of Wine Fernando Mora and his partner Mario Lopez, decided to make wine together with the grapes of Mario’s family’s Las Cellas vineyard and make the wines in a blend of traditional and modern methods. Native yeast primary fermentation in stainless steel, malolactic fermentation in concrete and aging for 14 months in large format, second use French oak barrels. The Las Cellas vineyard is certified organic, with very old vines (Viñas Viejas) of 60-80 years. Old vines give grapes of higher quality but much lower quantity, so we are very excited to share this beautiful, smooth, medium-bodied, red-fruited and spicy expression of Garnacha with you at a great price! The wine will happily accompany boldly flavored dishes like grilled lamb chops, spicy sausages or jamon. **Please note** This wine will need to blow off some reduction, AKA “bottle stink”, a complicated chemical interaction between certain varietals, sulfur compounds produced by fermentation and oxygen deprivation. Given a few minutes in the glass (decanting the bottle and/or vigorously swirling it in the glass will accelerate the process) the oxygenation will completely alleviate the off aromas to unmask the real wine underneath.
