The Brda region is directly across the border with Italy and is a continuation of the Italian Collio Denominazione. Rebula is the Slovenian word for Ribola, a grape that has been grown in the Collio/Brda re gion since at least medieval times. The deep golden color and thickness of its skins make it ideal for producing orange wine, which is a traditional style on both sides of the border. As you might recall from the sparkling Greek wine from the last shipment, orange wine gets its name from its deep-golden-to-amber color that is the result of making a white grape into wine using the skins as one would a red wine. Kabaj winemaker Jean-Michel Morel hand harvests the sustainably grown grapes and ferments them with indigenous yeast on their skins for a month. After pressing the wine is aged for a year in French oak barrels. The wine has a medium weight and tannin level, and the flavors are quite unique, with spicy, gingery notes married to pear, peach pit and Rainier cherry. These wines should be served with a very slight chill and are extremely versatile for food pairing. Use this wine with foods that would traditionally pair with white wines but also those you might pair with a light red.
