This wine is barrel fermented and aged in used French oak on the lees, with malolactic fermentation is prevented in order to keep the laser-like acidity. “Surlie” is a play on words referring to the French term “sur lie” that means aged on the lees, and which gives a creamy texture along with sweet pastry flavors.
